Strawberry Blueberry…Twoberry muffins!

A week ago, the kids were crazy over berries, but this week, banana was the hot fav so I had half a punnet of fresh strawberries and slightly under ½ cup of fresh blueberries sitting in the fridge.

I wanted to use these berries while they were still good, so I started hunting down a recipe for muffins. I found a good recipe on Cooks.com (click here for the link), and inspired by this book that DD had received as a gift –

 – tweaked it a little to make our own version of twoberry muffins. 🙂

Twoberry Ingredients:
3 tbsp butter
2/3 cup sugar
1 egg, beaten
½ cup milk
1 ½ cup self raising flour
1 ½ cup mixed strawberries and blueberries

Instructions: I followed the instructions on the original recipe, except I baked the muffins at 350 deg F for 17 minutes, and didn’t brush it with butter and sprinkle sugar when they were done, as I felt the muffins were already sufficiently sweet.
